    My 1.5yo son's morning routine is a serving of fruit and oats [mashed with split peas or lentils] which provides complete a protein in our vegetarian diet. 3 times a week we do an omelette with a few spinach/kale frozen baby cubes tossed in. Nice to know there are other benefits to our porridge and "green eggs" I hadn't considered. As always, thanks for all the info!

    Nice job and good advice with the folates and leafy greens. Good thing my DD loves ceaser salads, so she'll do the romaine lettuce.
  • Thanks for the kudos! We've been focusing on getting more of those good greens in our diets in my family too. I also learned recently that lentils are packed with folate (and tons of fiber), so I just cooked my first lentil soup tonight and it was a hit!
